Some fish taco ideas – Making the fish taco

For the fish, any white fish will do, but we love using Whole Foods frozen wild caught Cod fillets ($25). The fillets are frozen individually in a food-safe wrap. We cut two fillets from the packet to make four fish tacos. They don’t take long to thaw.

You can prepare corn tortillas in several ways. We prepare the tortillas the traditional Mexican way. We fry the tortillas one at a time and fold them into the taco shape. See this YouTube Video

Next, we marinate the fish (slices into one-inch slices). We use a homemade taco seasoning and one tablespoon to two tablespoons of olive oil. There are plenty of store-bought taco spices, but homemade is much better. See link. I go with a light to medium spice. Not too spicy or hot; otherwise, it isn’t easy to match a wine.

Some folks like to beer batter their fish and deep fry. We enjoy a healthier method. We fry the fish in the marinade sauce.
