Spanish Lentil Soup – The Perfect Winter Night Meal
I found the Spanish Lentil Soup recipe at the Spanish Table Website years ago and have tweaked it over time. Spanish lentil soup is a hearty meal and is perfect for a cold winter night. What makes it Spanish? It is the Spanish Chorizo, Spanish smoked paprika, and the Spanish Sherry vinegar. There are many types of lentils. I usually use fancy green lentils. More on lentils
Recipe for Spanish Lentil Soup
Ingredients
- 2 cups of your favorite lentils – I use fancy green lentils
- 2 quarts chicken broth
- 1 bay leaf
- 1 large yellow onion
- 2 ribs of celery
- 3 tablespoons extra virgin olive oil
- 1 large leek, white and light green part only – small dice
- 2 large carrots – small dice
- 4 oz. Spanish chorizo – I use Bilbao – it is mild and flavorful – slice 1/4 each. Chop those if you want smaller pieces
- 1 teaspoon Spanish smoked paprika
- 1 teaspoon of ground cumin
- 1 tablespoon kosher salt
- 1 teaspoon ground black pepper
- Chopped parsley
- Spanish sherry vinegar – drops in each soup bowl
Instructions
- Rinse the dried lentils in a colander
- Cut the onion in quarters
- Roughly chop one of the ribs of celery
- Combine the rinsed lentils, bay leaf, onion and celery with the chicken broth in a soup pot
- Bring the pot to a boil and then simmer for 30-45 minutes or until the lentils are soft
- Remove and discard the bay leaf, onion and celery
- In a separate 10-inch saute pan, add the olive oil
- Saute the chorizo for two minutes
- Add the leeks and carrots and saute for 8 minutes
- Add the cumin, paprika, salt and pepper and saute for two minutes
- Add the ingredients in the saute pan to the pot of lentils.
- Simmer for 30 minutes. If soup is too thick, add more chicken broth
- Ladle the soup into warm soup bowls. Add some drops of the Spanish sherry vinegar and some chopped parsley to the soup.
