Smoked Salmon Sandwich with Avocado and Lime Mayonnaise
I discovered this delicious Smoked Salmon sandwich with avocado and lime mayonnaise at the Toussaint Cafe in Amsterdam a few summers ago. The sandwich came with a choice of bread, and I chose what they call brown bread in Amsterdam. I believe the bread to be a heavily grained wheat bread and very delicious. I make this sandwich often and love it with either a whole grain bread or fresh sourdough bread. I make a sourdough loaf that is 50% bread flour and 50% whole wheat. My Costco store and Trader Joe’s store has great deals on Smoked Salmon. Make a batch of these sandwiches for your next luncheon gathering.
Ingredients for Smoked Salmon Sandwich with Avocado and Lime Mayonnaise
- Slices of smoked salmon
- Half an avocado
- Spring mix or Arugula
- Tomato slices – optional
- Lime Mayonnaise
- Whole grain bread or bread of your choice
To make the Lime Mayonnaise – mix in a dish
- 1 cup of Mayonnaise
- Lime Juice, half a juicy lime
- Zest from one lime

I love a medium-bodied red wine, such as a Rhone blend, a Rioja Tempranillo, or an Oregon Pinot Noir. Really, any white, Rosé, or red wine will match with this delicious sandwich.
