Mushroom pizza with leeks and herbs: ingredients

  • One homemade pizza dough – See how to make your own dough
  • Two leeks, mostly white portion quartered and sliced
  • 10 oz of Cremini mushrooms sliced
  • Monterey Jack- just enough. – 3 oz is tops
  • Dry Monterey Jack – 1 oz is tops
  • One-to-two cloves of garlic minced
  • Two tablespoons olive oil
  • Two tablespoons of fresh herb mix (thyme, oregano, and parsley) – less if using dried herbs

Mushroom pizza with leeks and herbs: Instructions

  1. Slice the leeks and saute them in butter until soft and translucent
  2. Remove the leeks and set aside
  3. Add more butter and olive oil and saute the sliced mushrooms until the mushrooms give up their juices. Add a couple of pinches of salt to the mushrooms when you begin the saute.
  4. Add the minced garlic to the mushrooms
  5. Add one tablespoon of the herb mix to the mushrooms. Mix the herbs with the mushrooms; remove from the pan and set aside.
  6. Roll out the dough to a ten-inch diameter.
  7. Put some semolina flour under the dough. It will help slide the pizza on to your stone.
  8. Place the leeks on the dough.
  9. Sprinkle on half the cheese.
  10. Place the mushrooms on the dough
  11. Add the remaining cheese
  12. Cook pizza on the stone until the crust is firm and the cheese melts.
  13. Take out the pizza and sprinkle the remaining herb mixture.
  14. Slice the pizza and serve.

What wine matches with a mushroom pizza?

My choice of wine to serve with a mushroom pizza is Zinfandel. Zinfandel rocks with the mushrooms, leeks, and jack cheese.  A earthy tasting wine is also a good choice for this mushroom pizza. A wine from the Priorat regions of Spain is a very worthy choice.
