Mushroom Pizza with Shallots and Herbs

Mushrooms are healthy and nutritious. Mushrooms have terrific flavors. Some chefs say mushrooms provide a fifth flavor, umami.

Check out this delicious mushroom pizza. Less is more when it comes to the amount of cheese.

Mushroom pizza ingredients

  • One homemade pizza dough – See how to make your own dough
  • Four shallots thinly sliced – about 3/4 cup
  • 10 oz of Cremini mushrooms sliced *
  • Mozzarella cheese and Fontina Cheese – just enough
  • One-to-two cloves of garlic minced
  • Two tablespoons olive oil
  • Two tablespoons of fresh herb mix (thyme, oregano, and parsley) – less if using dried herbs

Mushroom Pizza Instructions

  1. Slice the shallots and saute them in olive oil for about four-to-five minutes or until soft
  2. Remove the shallots and set aside
  3. Add more olive oil and saute the sliced mushrooms until the mushrooms give up their juices. Add a couple of pinches of salt to the mushrooms when you begin the saute.
  4. Add the minced garlic to the mushrooms
  5. Add one tablespoon of the herb mix to the mushrooms. Mix the herbs with the mushrooms; remove from the pan and set aside.
  6. Roll out the dough to a ten-inch diameter.
  7. Place the dough on a pizza stone for one minute and then remove. See method.
  8. Place the shallots on the dough.
  9. Sprinkle on half the cheese.
  10. Place the mushrooms on the dough
  11. Add the remaining cheese
  12. Cook pizza on the stone until the crust is firm and the cheese melts.
  13. Take out the pizza and sprinkle the remaining herb mixture.
  14. Slice the pizza and serve.

What wine matches with a mushroom pizza?

My choice of wine to serve with a mushroom pizza is Syrah. Syrah has some meaty flavors and a bit of earthiness.

* Mix and match a variety of mushrooms depending on your preferences. Cremini mushrooms have excellent earthy flavors but adding different types of mushrooms will add other characteristics.
