This pizza recipe comes from the Greens Cookbook, published in 1987. Greens vegetarian restaurant is still operating in Fort Mason in San Francisco. Unfortunately, the Greens Cookbook, Extraordinary Vegetarian Cuisine from the Celebrated Restaurant, is out of print. Try your local library to check out this terrific cookbook. The pizza recipes in the book are alone worth a trip to the library.

In our house, Sunday night is pizza night. We love watching a good movie with a delicious pizza and a fantastic bottle of wine. Of course, the wine must be red for the goat cheese pizza with red onion. All herbs come from our herb garden.
Here are the ingredients for the way we like to cook this awesome tasting pizza dish
- Pizza dough
- 1 small red onions thinly sliced
- 2 cloves of garlic chopped or through a garlic press
- 3 TBS of olive oil
- 2 oz of mozzarella cheese
- 2 oz of goat cheese – we use crumbled goat cheese
- A dozen or more California green olives pitted and cut in half
- 2 sun-dried tomatoes packed in oil, cut into strips
- Fresh garden herbs – experiment. We like oregano, thyme, parsley, tarragon, or rosemary, mix or solo.
Instructions
- Prepare your dough
- Put one chopped garlic in a dish with one TBS of olive oil – let sit for 15 minutes or more
- Saute the red onions in the remaining olive oil until translucent
- Add garlic to the pan
- Add salt and pepper and cook another few minutes to develop the flavors
- Remove from the pan and set aside
- Heat your oven – we use 550 setting but the real temp in our oven is 500
- We use a baking steel – takes about 45 minutes to get totally hot
- You can use a pizza stone or cast iron pan for cooking the pizza
- Shape your dough to 10 to 12 inches in diameter
- Brush the olive oil on the dough – but not one inch around the outer edge
- Place the mozzarella cheese on the dough, add the onion mix
- Add the goat cheese and the olives and sun-dried tomatoes
- Slide the pizza on to a pizza stone or baking steel
- Cook until the edges or brown and toasty – in our oven & on the steel = 8 minutes
- Remove the pizza dish and sprinkle the fresh herb on the pizza
- Slice and enjoy with a good movie.
