December through February is soup time around our house. We love Minestrone, Lentil, Tortilla & Black Bean, and Butternut Squash Soup. We have tried many Butternut Squash Soup recipes, and our favorite by a big margin is Thomas Keller’s Butternut Squash Soup with Brown Butter.
The Thomas Keller’s Butternut Squash Soup is a little more extra prep, but the results are a fantastic-tasting soup. The soup is good for a starter or a meal in itself. Thomas Keller is the famous chef and founder of the top Michelin-rated French Laundry Restaurant in Yountville. This recipe is from his Bouchon Restaurant, also in Yountville.

Thomas Keller’s Butternut Squash Soup with Brown Butter
Do you have herbs growing in your garden? You need fresh thyme, sage, parsley, bay leaves, and chives. The unique feature in this recipe is the Bouquet Garni. Using the green leaves of a leek, the herbs except for the chives are wrapped inside the leaves. The result is a beautiful fragrance of enticing herbs. Add nutmeg, fresh chives, and some creme fraiche, and the soup is delicious. The recipe calls for fresh Sage leaves roasted in cooking oil.
Most Butternut squash soup recipes call for dicing the squash into one-inch cubes and then roasting until soft. This recipe calls for a different way of cooking the squash. You’ll be able to use a package of Trader Joe’s already-cubed Butternut squash.

- Viognier/Chenin Blanc – Pine Ridge
- Rosé – Carol Shelton Wild Thing – buy it at the Safeway
Red Wines
- Kirkland Willamette Pinot Noir
- Grenache or Garnacha – the lighter in style, the better
- Barbera – Sobon from Sierra Foothills
- Sangiovese – from Italy’s Chianti region
