Artichoke and Spinach Pizza

For those who like pizza without any meat or fish, try the Artichoke and Spinach Pizza. Here is a link to the recipe. I like to add red onions to the ingredients. I sauté them within the pan first and then add the garlic. I add the garlic once the red onion looks transparent. Use onion slices.

For the dough, I make my dough using a sourdough starter. I do not add yeast. Instead, I let the natural yeast in the starter do the work and make great-tasting pizza dough. Matching wine with this pizza is a little tricky. First, I tried a dry wine, Sauvignon Blanc, and it was okay. Then I tried a glass of Rhone wine, a blend of Grenache and Carignane. I thought it was a much better match. However, a big red wine might be too much for this dish.
